The Buckhorn Exchange opened in 1893 and holds Colorado Liquor License No. 1 — the very first the state issued when Prohibition ended — which tells you everything about how long it’s been pouring. It’s a temple to the frontier: more than 500 taxidermy mounts stare down from the walls, Buffalo Bill and five U.S. presidents have eaten here, and the menu is unapologetic Rocky Mountain game — elk, buffalo, quail, and, if you dare, the Rocky Mountain oysters and rattlesnake. It sits across from a light-rail stop in an old workingman’s neighborhood, looking exactly as it did a century ago. This isn’t a themed restaurant pretending to be old; it’s the real, unbroken thing.

The move: Come hungry and order the game — the elk or buffalo steak is the move, and split an order of Rocky Mountain oysters as a dare if the table's game. Go up to the second-floor bar afterward for a whiskey under the white buffalo. Reserve ahead; it fills, and it's worth dressing up a little for.
