The Sonoran hot dog crossed up from Sonora and made Tucson its American capital: a hot dog wrapped in bacon and grilled, laid in a soft, sturdy bolillo roll, then loaded with pinto beans, diced onions and tomatoes, mustard, mayonnaise, and roasted-chile salsa, usually with a whole roasted güero chile on the side. Tucson has dozens of carts and stands doing them, and the late-night cart culture — a folding table, a griddle, a string of lights on a dark corner — is as much the experience as the dog. It’s messy, it’s genuinely delicious, and it exists almost nowhere else in the country.
