In the tiny, remote town of Boulder — one of the last places in America to get its mail by mule — two women opened Hell’s Backbone Grill in 2000 and built one of the most acclaimed restaurants in the entire Southwest, a multiple James Beard Award finalist, sourcing almost everything from their own six-acre farm and local ranches. The food is refined, seasonal, Southwestern, and rooted in Buddhist and pioneer principles; the setting, on Scenic Byway 12 at the edge of Grand Staircase-Escalante, is stunning. That food this good exists this far from anywhere is the whole point.
